I see the end of my 360 games in sight and so started putting my PS3 games in order for some serious PS3 action in a couple of weeks, probably.
My thing with PS3 is mainly exclusives because I play most multiplatform games on Xbox. Here's a list of some games exclusive to PS3 I want to dig in with soon in roughly the order of critical acclaim (according to Metacritic).
Uncharted 1-3: I've played all of these before on both PS3 and PS4 but they are always worth revisiting. I have the physical PS3 copies again and will dig in soon.
The Last of Us: I've played it but not finished it. I don't like having to sneak around, but I like to challange myself with this mechanic and see how far I can get before my patience wears thin.
God of War III, Ascension and The Saga Collection: I will try and replay these even though the increase in QTEs drive me a little crazy. I'll try and play the two PSP games on the Saga Collection as well. I haven't really finished either of those.
Journey and Flower: I made a list of digital games for my PS3 and figured out how to buy them still until the store gets shut down about a year from now. It's not as long a list as my 360 one, but it's a page or two. Some are new ones. Journey is one I tried way back on a demo but never bought. I'd like to give it another shot. Flower too. There's a physical disc out there with both that I'm looking for.
ICO & Shadow of the Colossus Collection: Lots of good collections put out on PS3. I have a few of them like this one of two PS2 classics. I've always had trouble finishing them, but I'll give them another shot.
Little Big Planet 1-2, and Karting: Despite my resistance to all platformers, I can't resist adorable Sack Boy. I picked all these up pretty cheap recently and will dive in again, although, I haven't played Karting yet.
Killzone 2-3 and Trilogy Collection: I have the Trilogy Collection but have an interest in picking up the single games again just for my library. The HD version of the first game is in the Trilogy Collection as well.
Demon's Souls and Dark Souls 1-2: I start to devise a identity to a console based on some favorite games of mine. The dark fantasy theme seems fitting for PS3 to me. Dark Souls is a multiplatform series but just seems to fit alongside Demon's Souls, one of my favorite games for presentation. Now if I could just finish any of these.
Ratchet & Clank Future Series plus Into the Nexus: The two multiplayer and two PSP R&C games are of little interest to me. But these four R&C games are a must and I will love replaying them. The second game, Quest for Booty was download only in U.S.. I just hope I still own it and can download it again.
Resistance 1-3: Insomniac's FPS games. Sort of Gears of War for the Playstation. I've finished the first one, part of the second and I don't think I've even tried the third one, but I have them all now and want to binge-play the series.
Valkyria Chronicles: One of the reasons I got a PS3. I just wish the second game on PSP was ported to the console as well.
Zen Pinball 1-2 - Playstation's Pinball FX by the save dev. I don't remember Zen Pinball 2 for some reason. I remember playing the first one and then moving on to Pinball FX on Xbox. I'll have to hunt the digital streams for the second game.
Ni No Kuni: I was very excited for this at release. I never finished it. It's always been a singular essential for my PS3 though. Graphics are king in my book.
inFamous 1-2: These were sort of superhero games without a branded superhero. The series is exactly like Prototype out around the same time. Their just fun and worth a revisit.
MotorStorm Series: I've recently gotten interested in this off-road racer. There are three games, one of which I have, that I'm looking for. I hope to check it out.
PixelJunk Monsters and Shooter 1-2: I always thought tower defense, like in Monsters, was my own niche interest, but I'm finding that it was quite the popular style in these PS3 years. I've never tried the Shooter games. If I can buy them, I'll give them a run.
Dragon's Crown: I always have to get the Vanillaware games. I got the remaster on PS4 later and traded my original. Now I want it back. Hope it's not pricey.
Hot Shots Golf: Out of Bounds and World Invitational I've become a fan of this series. These two games are now called Everybody's Golf 5 and 6.
Heavenly Sword: A kind of God of War game with a female lead by Devil May Cry devs Ninja Theory. I was excited for it back in the day and played it. I don't remember much of it now which is a good reason to play it again.
PAIN: Take Angry Birds and do it with cartoon people. This downloadable game was just goofy fun for MK and I back in the day.
Akimi Village: Another downloadable by the makers of A Kingdom for Keflings (NinjaBee?). It's the same sort of game but with a Japanese theme.
Untold Legends: Dark Kingdom: This co-op dungeon crawl was fun with MK when it came out. There were two PSP games as well I played when I had a PSP. Wish they got ported. It wasn't super great, but until Diablo III came out, it fit the bill.
Wizardry: Labyrinth of Lost Souls: Not too many Wiz games available until recently when I saw several on Switch. Back then this was an eye opener for me. It's the Japanese style versions of the SirTech first-person dungeon crawls, but still good. Hard though.
Haze: A FPS by the Timesplitters dev. I thought the controls were excellent. The story is sort of rediculous, but it's controls that matter to me. Always a favorite on PS3 for me.
Lair: I was crazy excited for this dragon flight game by the makers of Rogue Squadron. It's use of motion controls was a little clumsy, but, if I remember right, they patched it. I like the graphical look of it as well. Always a must for my PS3 collection, good gameplay or not.
And that's all the exclusives I'm interested in on this system. I can't guarantee I won't play any cross-platform games on my PS3. A few I can't resist having on as many decks as I own.
As an exclusive I suggest 3D Dot Game Heroes, think Zelda with voxel graphics.
Not exclusives: Battlefield: Bad Company 1 and 2 for their campaigns, and Red Faction: Guerrilla for how much you can tear down things haha, although you can also do that in the Bad Company games.

I've played Battlefield Bad Co 1-2 on Xbox, but you're reminding me how much I enjoyed those and should replay them. And, I have Red Faction Guerrilla for PS3 somehow, even though I played it on Xbox years ago, and so will play it again soon.
I feel like I did a decent job collecting some good PS3 exclusives and a bad job playing any of them lol. I'm surprised you didn't mention Alpha Protocol or Binary Domain (I don't remember if those are exclusives but I think of them as PS3 games). Also, from a gameplay standpoint, since you have the PS4 remasters, there is absolutely no need to get the PS3 version of Dragon's Crown unless you want to see it sitting on your shelf. That was a great remaster.
Don't forget about Tokyo Jungle!
Both AP and BD out on Xbox as well. I feel like I played them at some point but don't remember much. I'll have to add them to the list to get and try again.
Since I'm currently hooking up only one console at a time, I wanted a version of Dragon's Crown to play when I set up my PS3 soon. I can't have enough Vanillaware on my shelf.
